For lunch we had Cheater's Fattoush which is very easy and tasty.
Cheater's Fattoush:
Penzey's Greek Seasoning Mix - make the salad dressing on package
Ripe Tomatoes
Red Pepper
Cucumber
Pita Chips (Homemade or bought - we always keep a bag handy for last minute meals)
Chop up vegies and pour salad dressing over them. Crumble up some chips and add right before you serve it.
Not all local but the tomatoes and pepper were from our garden and the cucumber was from the Farmer's Market.
We also made banana oatmeal bars (nothing in them was local) and for dinner we had crap. Specifically, fried okra and stuffed jalapenos. The okra and cornmeal was local. The peppers were local but the cream cheese, cilantro & bacon were not. After eating this meal, I had a small heart attack and went to bed.
