We made this a couple of days ago from local sweet cherries from the Fruit & Berry Patch. It's been miserably hot here this week so this has tasted especially good. I got this recipe from Animal, Vegetable, Miracle by Barbara Kingsolver. It's one of my favorite books.
Cherry Sorbet
2 heaping cups pitted sweet cherries
3/4 cup sugar (or honey to taste)
2/3 cup water
Combine sugar and water over low heat, stirring until sugar has dissolved completely. Let cool. Combine with cherries in a blender and blend until smooth. Pour into ice cream maker and freeze as directed.
